Why that is
Induction stoves generate heat through electromagnetic fields. This only works with ferromagnetic materials — metals that are attracted to a magnet. Stainless steel is ferromagnetic, aluminum is not. Since the classic Bialetti Moka Express is made of aluminum, the induction stove doesn’t recognize it and won’t heat up.
Three solutions:
1. Buy a stainless steel Moka pot. The cleanest solution. Models like the Bialetti New Venus, Bialetti Musa, or the WMF Kult are made of stainless steel and work directly on induction. Flavor-wise they are equivalent, but they are easier to care for than aluminum and are dishwasher safe. Cost: €25–50.
2. Moka pot with an induction base. Some manufacturers offer aluminum pots with an attached ferromagnetic base (e.g., Bialetti Moka Induction). The base is recognized by the induction cooktop and transfers the heat to the aluminum. Advantage: lighter than full stainless steel. Disadvantage: The base can loosen with frequent use.
3. Induction adapter plate. A steel plate (€10–15) that is placed between the Moka pot and the induction stove. The plate is heated by the stove and passes the heat onto the aluminum pot. It works, but with drawbacks: The heat transfer is less efficient, the brewing process takes longer, and the plate gets extremely hot.
How to check for induction compatibility? Hold a magnet to the bottom of the pot. If it sticks, it works on induction. Alternatively, look for the induction symbol on the packaging — a stylized coil/spiral symbol.
Small pots on large burners: Some induction stoves don’t recognize very small Moka pots (1–2 cups) because the base is too small for the sensor. In this case, an adapter plate also helps, or you can simply use a larger pot.
In practice at Green Wall Coffee
At Sophienstraße 27, when people are buying a new one, I recommend getting a stainless steel pot straight away — it works on any stove, is more robust, and is easier to maintain. The Bialetti Venus barely costs more than the classic aluminum version and saves you the hassle of adapter plates.
