Why that is
Aluminum Moka pots — like the classic Bialetti Moka Express — react differently to cleaning than stainless steel or glass. Over time, the aluminum forms a dark patina made of coffee oils and oxidized aluminum. This layer is desirable: It seals the porous surface and prevents the coffee from tasting metallic. Italian grandmas swear that the coffee only starts tasting really good after weeks of use — because the patina has built up.
Proper care (Aluminum):
- After each use: Discard the coffee grounds, rinse all parts under warm water. Use your fingers to remove coarse residue.
- No dish soap. Soap strips away the patina, making the coffee taste metallic the next time you brew. The patina then has to build up all over again.
- No dishwasher. The aggressive detergents and high temperatures destroy the surface and irreversibly turn the aluminum a mottled gray-black.
- Air dry separated. Do not store the pot screwed together — moisture trapped between the gasket and the threads leads to mold and unpleasant odors.
- Check the gasket regularly. The rubber gasket between the top and bottom sections wears out over time and becomes hard. If steam escapes from the side or the coffee takes longer to brew than before, replace the gasket. Replacement gaskets cost €3–5.
- Check the filter screen. The fine screen in the upper part can get clogged with coffee residue. Occasionally rinse it thoroughly under running water and scrub it with a soft brush.
Stainless steel models (e.g., Bialetti Venus) are easier to care for: They can handle dish soap and are dishwasher safe. They don’t build up a patina — but the coffee tastes neutral from the very first brew.
When to replace an aluminum pot: When the aluminum is heavily corroded inside, the gasket won’t seal properly even after replacement, or the safety valve is stuck. A well-maintained Bialetti will last 10–20 years.
