Why that is

Pushing the plunger down does not stop the extraction — it merely separates the coarse coffee grounds from the coffee. The fine particles that pass through the metal mesh remain in the coffee and continue to extract. Additionally, the coffee above the plunger is still in contact with the wet grounds below.

Therefore, decanting is the crucial step, not plunging. If you let the coffee sit in the press after plunging, you will end up with a noticeably bitter, over-extracted result after 8–10 minutes. This happens especially fast with dark roasts.

The right technique:

  • Push slowly. Apply even, gentle pressure over 20–30 seconds. Plunging abruptly stirs up sediment and can cause hot coffee to splash over the edge.
  • Slight resistance is normal. The plunger should go down smoothly but with noticeable resistance, meaning no excessive force is needed. This indicates that your grind size and coffee dose are correct.
  • Heavy resistance: Grind size too fine. Grind coarser next time.
  • No resistance: Grind size too coarse. Grind slightly finer next time.
  • Pour immediately. Anything that isn’t poured straight into your cup should go into a thermos. This is the single step that makes the biggest difference.

Alternative: The Hoffmann Method. James Hoffmann recommends not pressing the plunger at all after 4 minutes. Instead, scoop off the foam and let the coffee rest for another 5–8 minutes. The particles will sink, and the coffee cools to a drinking temperature. Then pour carefully without using the plunger. The result: a clearer, less muddy cup.
