Why that is

Classic instructions for the Moka pot often say: add cold water, put it on the stove, wait. The problem: It takes 3–5 minutes for cold water to boil. During this time, the coffee grounds in the funnel sit directly above the heating water and are continuously baked from below — before any brewing water actually flows through. This dry heat burns the coffee and produces bitter, ashy notes.

With hot water (fresh from the kettle, no longer a rolling boil), the heat-up phase drops to under a minute. The coffee grounds are heated for much less time before the actual brewing process begins. The result: a milder, more aromatic coffee with less bitterness.

The difference is substantial. In blind tastings, most people taste a clear difference — hot water produces a cleaner, less burnt-tasting coffee. It’s the simplest and most effective trick for better Moka pot coffee.

Practical note: When you pour hot water into an aluminum chamber, the metal gets hot immediately. Use an oven mitt or a towel to hold it while screwing on the top section. Stainless steel models don’t get as hot at the base.
