Why that is
The Moka pot sits halfway between filter coffee and espresso — and that’s exactly where the grind size needs to be. The steam pressure in the lower chamber (around 1.5 bars) pushes the water through the coffee grounds in the funnel. If the grind size is too fine, the water can’t get through. Pressure builds up, the coffee extracts too slowly and turns bitter — in the worst case, the safety valve could trigger.
Too fine (espresso grind):
- Water can barely flow through.
- Over-extraction: bitter, burnt, harsh.
- Safety risk: pressure buildup in the chamber.
- Coffee sputters and hisses instead of flowing smoothly.
Correct: Medium-fine (fine sand):
- Water flows evenly through the funnel.
- Balanced extraction: strong, but not bitter.
- The coffee rises calmly and evenly into the upper chamber.
- Brew time: 2–4 minutes.
Too coarse (filter coffee or French press grind):
- Water rushes through too quickly.
- Under-extraction: thin, sour, watery.
- The strong character of the Moka pot is lost.
Pre-ground supermarket coffee is often labeled “for Moka/espresso” and is frequently ground too finely — optimized for espresso machines, not for Moka pots. In Italy, there are specific “Moka” grinds that are slightly coarser than espresso. In other places, grinding it yourself is the safest solution.
Guide for grinders: For a manual grinder (Timemore C2), roughly 12–15 clicks. For an electric grinder (Baratza Encore), in the lower-middle range of the dial. Always slightly coarser than for espresso.
