Why that is

Cold drip (also called Kyoto-style or Dutch coffee) fundamentally differs from cold brew, even though both are cold extractions. The difference lies in the method: cold brew is immersion (coffee steeps in water), while cold drip is percolation (water drips through the coffee).

How cold drip works:

A cold drip tower consists of three vertically arranged containers:

  1. Top: Water tank with cold water and ice. A valve regulates the drip rate.
  2. Middle: Coffee chamber with medium-fine ground coffee. The water slowly drips from above through the coffee bed.
  3. Bottom: Catch container for the finished coffee.

The drip rate is about 1 drop per second — it takes 3–6 hours for 500 ml. The water extracts the coffee drop by drop, not by soaking.

Flavor difference compared to cold brew:

  • Cold brew: Full-bodied, sweet, heavy body. The immersion process dissolves more oils and solids.
  • Cold drip: Clear, light, tea-like. The drip percolation produces a cleaner, more delicate coffee with less body but more clarity.

Cold drip showcases the subtle nuances of light, fruity coffees particularly well. Floral and citrus notes, which might get lost in a full-bodied cold brew, clearly stand out in cold drip.

Equipment: Cold drip towers are the most eye-catching coffee devices around — they look like lab equipment from a chemistry class. Elegant glass towers with valves and tubes. Prices range from 80 to 300 euros. There are more compact models for home use (e.g., Hario Cold Drip), but the result is comparable.

Cold drip vs. cold brew: If you want full-bodied, sweet cold coffee, choose cold brew. If you’re looking for clarity, lightness, and delicate flavors, try cold drip. Both are good — just different.
