Why that is

Nitro cold brew starts out as regular cold brew — cold extracted, filtered, done. The difference only happens when serving: The cold brew is infused with nitrogen (N₂) under pressure and pushed through a special tap with tiny holes. The nitrogen forms minuscule bubbles that give the beverage its characteristic texture.

What the nitrogen does:

  • Creamy texture. The fine nitrogen bubbles create a velvety, almost silky mouthfeel — completely different from regular cold brew. It feels like milk has been added, even though there’s none in it.
  • Cascade effect. When poured, you can see the bubbles sink downwards like in a Guinness and then dissolve upwards. It looks spectacular.
  • Fine head of foam. A dense, creamy layer of foam forms on top — similar to a stout beer.
  • Natural sweetness. Many nitro cold brew drinkers perceive the beverage as sweeter than regular cold brew, even though no sugar is added. The creamy texture enhances the perception of sweetness.

Why nitrogen and not CO₂? Carbon dioxide (like in sparkling water or soda) makes coffee taste sour and fizzy — that doesn’t fit the gentle character of cold brew. Nitrogen is flavorless and forms much finer bubbles. The result is creamy instead of sparkling.

Can you make nitro cold brew at home? Technically yes, with a whipped cream dispenser or a special nitro dispenser (starting around €50). However, the results are not comparable to a professional tap system — the texture is less fine, and the effect doesn’t last as long. For the full nitro experience, it’s worth visiting a cafe.

Nitro cold brew is always drunk neat — without ice, without milk. Ice would destroy the foam head, and milk would overpower the velvety texture.
