How stomach-friendly a coffee is depends on three factors: the bean, the roast, and the brewing method. If you adjust all three variables, you can often enjoy coffee even with a sensitive stomach.
Factor 1 — The bean:
- Low-acid origins: Coffees grown at lower altitudes have less acid. Brazil, Sumatra, India, and parts of Java naturally produce low-acid beans.
- High-acid origins: Ethiopia, Kenya, and Colombia are known for bright, fruity acidity—wonderful in flavor, but not ideal for sensitive stomachs.
- Robusta vs. Arabica: Robusta contains less chlorogenic acid than some Arabica varieties and can be easier to digest.
Factor 2 — The roast:
- Darker roast = less acid. During roasting, chlorogenic acids break down and N-Methylpyridinium (NMP) forms, which inhibits stomach acid production.
- Slow drum roasting breaks down acids more gently than fast industrial roasting at high temperatures.
- Espresso roasts are therefore gentler on the stomach than light filter roasts.
