Why that matters

The moment coffee is ground, its surface area increases by a factor of roughly 10,000. Volatile aroma compounds that were protected inside the intact bean are suddenly exposed to air. Within 15–30 minutes, a measurable aroma loss begins. After 24 hours, ground coffee has lost much of what distinguishes good coffee from mediocre coffee.

Whole beans, stored properly, hold their aroma for 4–8 weeks after roasting. The bean’s dense cell structure acts as a natural barrier, keeping oils, gases, and volatile compounds locked in. Only when you grind does the clock start ticking.

If you don’t have a grinder and can’t get one yet, buy pre-ground coffee in small quantities — enough for one to two weeks maximum. Look for bags with a roast date (not just a best-before date) and buy from roasters who grind to order. Supermarket ground coffee in large cans has been sitting for months and is essentially flavourless compared to freshly ground.

A hand grinder starting at 30–50 euros is the single best investment for better coffee at home. It matters more than the brewing device, more than the water, and more than the technique. If you change only one thing about your coffee routine, make it this.
