Why that matters

The answer is so clear that it’s barely debated in the coffee world: whole beans are superior to ground coffee in every respect — if you have a grinder.

Aroma loss. Whole beans protect their aromatics behind a dense cell structure. The 800+ volatile compounds that create flavour are locked inside. Once the bean is ground, surface area multiplies by a factor of 10,000. Aromatics escape in minutes, oils oxidise in hours. Whole beans stay at a good level for 4–8 weeks; ground coffee loses noticeably after just days.

Grind size. Different brewing methods need different grind sizes. Espresso: very fine. French press: coarse. Pour-over: medium. Buying whole beans lets you match the grind to the method. Pre-ground coffee comes in one universal grind — and it’s optimal for no method.

Freshness control. With whole beans, you decide when the clock starts ticking. You grind what you need, and the rest stays protected inside the bean. With pre-ground coffee, the clock starts at the moment of grinding — and you often don’t know when that was.

Quality signal. Whole beans can be inspected: even colour, size, no defects. With ground coffee, you can’t see what’s inside. Industrial roasters can mix in defective beans, foreign matter, or filler material — with whole beans, that’s visible.

The only downside of whole beans: you need a grinder. But even a cheap hand grinder (from 30 euros) delivers better results than any pre-ground coffee. The investment pays off from the first cup.

If you don’t have a grinder and don’t want to buy one, buy ground coffee in small quantities — 250 g maximum — and use it within 7–10 days. Better yet: have your trusted roaster grind it on site, specifying the grind size for your brewing method.
