Why that matters

When coffee is roasted, carbon dioxide forms inside the bean’s cellular structure. After roasting, this CO₂ releases slowly — most intensely in the first 24–72 hours, then gradually over several weeks. A 250 g bag of freshly roasted coffee can release enough gas to significantly inflate or even burst a sealed bag.

The one-way degassing valve solves this elegantly. It’s a small disc (usually on the front or back of the bag) that lets gas flow outward but blocks air from entering. The roaster can pack the coffee immediately after roasting without waiting for degassing — and the bag stays intact while keeping oxygen out.

Without a valve, roasters would face a dilemma: either leave the bag unsealed (and expose the coffee to oxygen, which accelerates staleness) or wait days before packaging (losing freshness). The valve allows the best of both worlds: immediate packaging with ongoing degassing.

You can test the valve by squeezing the bag and sniffing — the released air carries the coffee’s aroma. If pressing the valve yields a rich, intense smell, the coffee is likely still fresh. If it smells flat or you get no aroma at all, the coffee has either fully degassed or is past its prime.

Not all bags with valves contain quality coffee — but quality coffee almost always comes in bags with valves. The valve itself costs only a few cents, but it signals that the roaster cares about freshness.
