Why this is so
A soapy aftertaste is unpleasant and almost always points to a problem outside of the bean. There are four typical causes:
Cause 1: Dish soap residues. The most common and simplest explanation. If the carafe, French press, portafilter, or cup were not rinsed thoroughly, minimal dish soap residues dissolve in the hot water and create the soapy taste. Solution: always rinse equipment with clear hot water — no dish soap on parts that come into direct contact with the coffee.
Cause 2: Water too soft. Water with a very low mineral content (under 50 ppm TDS) can give coffee a flat, soapy taste. Minerals in the water help to extract and bind aroma compounds. Without them, the coffee tastes empty and unpleasant. Solution: measure water hardness. Ideal is 100–150 ppm TDS. If the water is too soft, a remineralization solution can help.
Cause 3: Unrinsed filter papers. New paper filters — especially unbleached ones — can give off a papery to soapy taste. Solution: always pre-rinse filter paper with hot water and discard the rinse water before pouring the coffee.
Cause 4: Overextracted lipids. Coffee contains natural oils (lipids). With a long contact time or a very fine grind, these can be overextracted and leave an oily, soapy film in the mouth. This happens especially with the French press, where no paper filter holds back the oils. Solution: shorten the brew time, adjust to a coarser grind, or switch to a method with a paper filter.
