Why that matters
Green coffee is more stable than roasted coffee because the Maillard reaction hasn’t occurred yet — the chemical compounds that create aroma and flavour still exist in precursor form. As long as the bean stays unroasted, it’s largely protected from oxidative degradation.
The ideal storage conditions: dry (below 60 % humidity), cool (15–20 °C), dark, and well-ventilated. Traditionally, jute sacks are kept in climate-controlled warehouses. More modern methods use vacuum-sealed or nitrogen-flushed packaging (GrainPro bags) that extends shelf life.
Still, green coffee changes over time. In the first 6–12 months after harvest, it’s at its most aromatic — the acids are lively, the aromas fresh. This coffee is called “current crop.” After 12–18 months, the acids flatten, the aromas dull. Coffee from the previous year’s harvest (“past crop”) tastes noticeably less vibrant.
There is a special category: “Aged Coffee” or “Monsooned Coffee.” Here, green coffee is deliberately stored for years or exposed to monsoon winds (as with Indian Monsooned Malabar). The result is very mild, low-acid, earthy profiles — a niche product for enthusiasts.
For roasteries, timing is critical: they buy green coffee as fresh as possible after harvest, store it under controlled conditions, and roast in small batches so the roasted coffee reaches the customer quickly. The entire chain — from harvest through roasting to the cup — follows a freshness principle.
