Why this is so
In large coffee chains, syrups are a standard part of the menu: vanilla, caramel, hazelnut, seasonal varieties like pumpkin spice. That works because the base coffee there is mostly industrially roasted — dark, bitter, little inherent flavor. Syrups cover up this bitterness and make the drink sweet and aromatic.
In specialty cafes, the starting point is different. The beans are carefully selected and roasted light to medium to preserve the natural aromas. An Ethiopian Yirgacheffe can taste like jasmine and bergamot. A Colombian Gesha like peach and honey. If you pour a vanilla syrup in there, all you taste is vanilla.
It’s not about restriction, but about respect for the product:
- The farmer selectively picked and carefully processed the cherries.
- The roaster developed an individual roast profile to bring out exactly these aromas.
- The barista adjusted the grind, temperature, and ratio to hit the balance.
A syrup would ruin all this work.
Does that mean syrups are bad? No. Anyone who likes to drink their coffee sweet and flavored should do so. But in a specialty cafe, the concept is different: here the coffee itself takes center stage — not the addition.
