Why that matters
The best-before date (BBD) on coffee is a legal requirement, not a quality indicator. It guarantees that the product is safe to consume until that date — but safety and flavour are two very different things. Coffee that’s technically within its BBD can taste thoroughly stale.
Most industrial roasters set the BBD 12–24 months after roasting. Specialty roasters are often more conservative, setting it at 6–12 months. But the actual flavour window is much shorter: whole beans are at their best roughly 2–6 weeks after roasting. After 8 weeks, noticeable aroma loss sets in. After 3–4 months, even well-stored coffee is a shadow of its former self.
The roast date tells you far more than the BBD. If a bag shows a roast date of two weeks ago, you know you’re in the sweet spot. If it only shows a BBD of “December 2027” with no roast date, you have no idea whether the coffee was roasted last week or last year.
This is one of the simplest ways to distinguish specialty coffee from commodity coffee: specialty roasters print the roast date prominently. If you can’t find a roast date on the bag, that’s usually a sign that freshness isn’t a priority for that brand.
