Why that matters
As long as the packaging is sealed, it protects the coffee from its greatest enemy: oxygen. Quality bags are often nitrogen-flushed — this displaces oxygen and preserves aromas. The one-way valve lets CO₂ escape without letting air in. In this state, roasted coffee stays at a good level for 8–12 weeks.
Once you open the bag, everything changes. Oxygen rushes in and begins oxidising the coffee oils. These oils carry a large part of the aroma. Oxidised oils taste flat and slightly rancid — not toxic, but without the character the coffee once had.
How fast the decline happens depends on three factors:
Roast level. Dark roasts have more oils on the bean surface — they oxidise faster than light roasts, where the oils are still locked inside the bean. A dark-roasted espresso loses quality faster after opening than a light-roasted filter coffee.
Storage. Sealed airtight, stored dark and cool: 3–4 weeks of good aroma. Open in the bag, next to the stove: noticeably flatter after one week. Storage after opening makes the difference between “still good” and “already fading.”
Whole bean vs ground. Whole beans have a much smaller surface area than ground coffee. Ground coffee loses its aroma after opening in days; whole beans in weeks. That’s the strongest argument for grinding fresh.
A rule of thumb: use the coffee within 2–3 weeks of opening. Buy smaller quantities — 250 g instead of 1 kg — and reorder more often. The few extra euros per kilogram are nothing compared to the aroma loss of a half-empty bag after six weeks.
